Traditional Guacamole

Ingredients

4 ripe avocadoes (peeled and seed removed)
3 tbsp. fresh lime juice
Salt and pepper to taste
1/2 cup diced fresh tomatoes
1/2 cup diced fresh onions

Directions

Place the peeled avocado in a bowl and with a potato masher or a fork mash the avocado pulp until almost smooth. Add all other ingredients to avocado and mix well. Serve with tortilla chips.

Spicy Peanuts

Ingredients

7 cups skinless unsalted peanuts (do not use roasted peanuts)
Salt to taste
5 garlic cloves (minced)
17 small red chiles (hot)
1 tsp. onion powder
1/2 tsp. cayenne pepper
1 tsp. olive oil

Directions

In a frying pan heat the olive oil, garlic, onion powder, chiles and cayenne pepper and cook for 1 minute stirring constantly. Add the peanuts to the mixture and mix well to coat the peanuts completely. Preheat the oven to a 300 degrees Farenheit and place the peanut mixture on a shallow baking pan (covered with aluminum foil). Bake for 10 minutes, then turn the peanuts over and continue baking for another 10 minutes. Sprinkle with salt and serve.

Notes and/or Tips

If you have leftover spicy peanuts keep them in a well-sealed container.
