Ingredients

2 lb. Peeled and shredded potatoes (like russet)
3 eggs
3 tbs. unbleached flour
1 peeled and shredded onion
1 tsp. salt
Oil for frying (about 1/4 of a cup)

Directions

Mix the shredded potatoes and onion (make sure there is no water left); add the eggs, salt and flour. Mix until well blended. Heat the oil in a frying pan and when hot add 1 tbs. of the potato mixture into the oil. Fry until the latke is brown on one side then, flip over and cook other side until brown (be careful not to burn the latkes). Place the latkes on a paper towel until all latkes are cooked. Serve on a platter with sour cream or applesauce on the side.

Notes and/or Tips

Latkes are very easy to prepare, they are usually made of shredded potatoes and eggs but you can substitute, yams, sweet potatoes, zucchinis, or any root vegetables of your choice. This recipe will make 20 latkes.

Latkes can be eaten salted or sweet. You can add salt to any latke recipe or omit it if you like your latkes sweet (then you can sprinkle the latkes with sugar or powdered sugar after they are cooked). For salted and spicy latkes you can add to the mixture chopped dill, parsley, fresh garlic or green onions.

Decorate with thin orange slices around the platter. Latkes can be prepared in advance and freeze for a later use. Frozen latkes can be reheated in the oven on a baking sheet (you do not need to grease the sheet). Latkes can make a wonderful breakfast, lunch or diner. Just add a soup or salad and you are ready to go.

You can do sweet or salty latkes. If you want to make sweet latkes, you can add 1 cup of blueberries, apple, and add a pinch of cinnamon to the mixture. For a variation of the salty latkes, you can add some chopped green and red bell peppers, or any vegetable of your choice.
