Pumpkin & Potato Gratin

Ingredients

1 lbs of potatos (for each pound of potato or pumpkin puree use 2 whole eggs)
2 whole eggs
Salt and pepper to taste
1 cup Parmesan cheese
1 tbs. unsalted butter

Directions

Grease a gratin dish with 1 tsp. Of butter. Preheat oven to 375 degrees Farhenheit. Mix the potato puree with the eggs, salt and pepper. Mix the pumpkin puree with the eggs, salt & pepper. Place the pumpkin mixture into the greased gratin dish and top with the potato mixture (smooth the mixture). Place the Parmesan cheese on top of the potato and sprinkle with the remaining butter. Bake for 30 to 40 minutes or until cheese is golden brown. Let cool foe 15 minutes before serving. This dish can also be enjoying as a main course with a green salad.
